Plum cake with crumble

We start by preparing the sourdough. After the sourdough rises, we make a soft dough. Before the dough rises, we need to prepare the baking tray, wash and stone the plums and prepare the crumble. Sourdough

Prepare the sourdough by mixing yeast, a spoon of sugar, a spoon of flour, a bit of lukewarm milk and let it rise in a warm place.

The crumble is used to finish the risen cakes.

The ratio of ingredients to crumble is 2: 1: 1 – two parts flour (coarse or semi-coarse), one part butter and one part sugar. The crumble should be crumbly, not greasy. We can add one vanilla sugar to make the cake smell nice.

Yeast dough preparation

Wipe the softened butter and sugar into the foam, add the egg yolks, sieved flour, salt, leavened sourdough and make the dough with lukewarm milk. The finished, well-prepared yeast dough is very smooth, soft and does not stick. Dust it with flour, cover the bowl with a tea towel and leave to rise in a warm place for about an hour.

Roll out the leavened dough and put it on a baking tray. Evenly put the plums on the dough and sprinkle with crumble. Let it rise for a while and bake the plum cake in a preheated oven at 180°C for approx. 40 minutes.
